This Star Wars Jedi: Fallen Order game guide shows a few examples how to parry while fighting enemies. In order to parry you must press (not hold!) the block button (L1/LB on the consoles) just before Cal is hit. The parry timing window changes depending on the difficulty level - the higher it is the more precise parry has to be. IMPORTANT - Some enemies rely on red attacks and you can't block or parry them. The only way to go to is to evade them.
