Sekiro - Owl, The Most Fun Boss of Sekiro

(No Damage, Charmless, NG+7, Demon Bell)
This is probably the most fun boss in the game. The way you can chase him during the fight is so engaging.
It's also quite interesting to see how my approach for this fight has changed compared to the No Damage fight I did back during NG+1.
